Easy Vegan Burger.

Easy, cheap and delicious!

Sweet potatoes. ( Two usually make 4 Burgers)

Half a can of chickpeas.

1/4 onion diced.

2 cloves garlic.

A few spoonfuls of flour.

1. Peel and Chop all your veggies.

2. Boil sweet potatoes until soft. While these are boiling blend (or if you don’t have a blender like me, mash with a fork!) your half tin of chickpeas. When sweet potatoes are totally cooked, drain and mash in with your chickpeas.

3. Sprinkle in whatever veg you wish. I choose onions and garlic today, but coriander is really delicious here too. Then separate into 4 even pieces and pat into a burger shape. A little flour here is good to keep the burgers in shape. Pop into the fridge for as long as your empty stomach can take. The longer these are in the fridge, the better the burger will keep shape.

Then serve with a salad and relish, as I have below. Or try some avocados and spinach, those are pretty good sides with these burgers too, and ENJOY!
